    Well I hope the brisket works good with a sweet/spicey rub. Can't wait to get up and smoke. Going to wrap half way through with some beef broth.

    I agree cherry is good with beef/pork.

    Plum is along the line of apple. I got plum becuase getting apple is a bitch in my area so I wanted a backup wood when I run out.

    Apple wood chunks and splits get sold out so damn fast in my area!! I love it with poultry, Pecan wood is my go to for beef and pork.

    Double smoked ham. I’ll never cook a ham in the oven again. Well, we bought a separate ham for the oven as the mom in law doesn’t like smoked ham. I argued that all hams are smoked, but didn’t win.

    We are finishing the egg hunt, then the game begins.

    Yes, the first of many today most likely.

    Ham is ready to go on. That extra time in the rub looks like it is going to pay off. Added light brown sugar on top a few minutes ago, and I’m letting that soak in while the smoker gets to temp.

    You guys get started early on the east coast. I am going right back to sleep as soon as I get the ribs in the smoker.
