    I boil sausage links in beer then grill. Maybe smoke them until almost done and then a boiling beer bath and browned up on a hot grill.

    @scottalot is already guaranteed to win when it comes to the payoff pic. I'm cooking this one, then giving it to someone to serve at a family function, so I don't even get to see how it turns out :(.

    I have a pork shoulder going on, too. That is for us. I didn't realize it when I bought it (or it was mislabeled), but it is a picnic cut instead of a Boston butt. :mad:

    That has me mildly perturbed. Oh well. Nothing a little Meat Massage can't overcome ;).

    Damn that looks good! Hungry. I have one thawing in the fridge right now for later today, plus making a run to Costco. It is 9° better warm up soon, still getting cooked even if it doesn't LOL. Hmm I haven't done pitfaced on a steak yet was afraid it would burn too much on the sear but that looks awfully good...

    You're well ahead of me (time zone difference included)! I just got the chimney lit. I'll be bumping the temp a bit on my cook to amend for my extra sleep this morning :laugh:.

    Stupid out of focus picture...

    I reverse sear with it quite often and it holds up just fine.

    Not as cold here, but keep in mind that I'm a Texan and it is April - I went out to start the coals and it was 38*. I had to go back in and dig through the closet for something warmer to put on. I thought I was done with those clothes for a while :laugh:.

    Did a boston butte, yard bird and wild pig/jalpeno link sausage last weekend for Easter. Used oak, 220 degrees and a Cajun seasoning. My sons buddy trapped the porkers. I saw 10 little piggies on way home night before last
