    Fat keeps potatoes from going gumming when whipping. Ideal mix is 50/50 fat to potato. Use a potato ricer and a balloon whip.

    Your taste buds and cardiologist will thank me.

    I might have to agree with duffyB.

    thankfully, I may like a baked potato better. done right with a crispy flavorful skin, fluffy interior. DIY butter adding, and etc. love it.

    Regarding the mashed/whipped potatoes... I can't eat them unless they've got a ton of milk, butter, salt, pepper, gravy, ect. Potatoes always taste like dirt otherwise imo. :notsure:

    I won't say they're the best, but they're (a) pretty dang good, if you use the right potato, (b) healthy if that's what you're going for, (c) super simple - don't have to worry about X and Y amounts of ingredients, etc. Wing it with potato water and salt, and it's fine.

    To each their own - I actually really like them this way, regardless of health concerns. With the peels - I am undecided, but leaning away from appreciating it....
