    So I got a salmon filet today that I'm going to wrap in some tinfoil and grill today. Any suggestions of what I should put in with it in the tin foil for flavoring? I was thinking some creole and some minced garlic, but I haven't done it. What is ya'lls suggestions!?

    here's my favorite salmon recipe:

    tear off a square of tinfoil
    pour a small amount (1 tsp) of olive oil on the foil
    wash and pat dry salmon fillet, about the size of your hand
    place skin side down on foil
    drizzle a little more oil (1 tsp) on top
    sprinkle a pinch or two of rosemary, thyme, sea salt and pepper on top
    place 2 fresh slices of lemon on top of salmon and fold up the corners of the foil to make a loose pouch. you can add fresh, diced roma tomatoes to the mix as well if you wish

    bake/grill at ~425* for 15-20 or until salmon is flaky

    goes great with risotto and asparagus

    I don't do beans without a ham bone. They almost give them away at my local honey baked ham joint. Cumin, garlic, ancho chili. Beans are great for you.

    Heh, we could start a sub-thread on geographic food snobbery.

    I moved to Florida in '98. I have a WHOOOOOOLE different take on what is acceptable in the seafood category now.

    Half of what fish I ate up north (not including fresh caught freshwater fish, o'course) wouldn't make it onto the table here. And almost NONE of the shrimp/crab/lobster/others.

    :laugh: true. growing up in MT seafood was non existent really. then I moved to AK and went nuts...if we went out to eat I ordered seafood. Halibut, crab, salmon. I can actually taste a difference in the salmon based on what river it came from. :eek:
