    Yes, it was salmon. The lighting really throws this off the color of the fish in my pictures. Not quite as red as yours....but it was not near that white/pink color you see in my pictures. Crappy lighting+crappy phone = poor display of food :eek:

    PIZZA! That looks so good. I haven't had pizza in a while but ground beef & green pepper is one of the best combinations IMO. Linguica + green pepper is also up there.

    I made a four ingredient slow cooker meal-- 1-2 lbs cut up skinless, boneless chicken, cut up 2 med/large mangos, 1 can unsweetened coconut milk, & a heaping helping of sriracha and chile paste (though the original recipe uses ancho chile flakes, I couldn't find them at my store). Leave the mango pits in the slow cooker for 5-6 hours on low and toss them before serving.

    It cooked while I was sleeping, so easy! I had it over steamed spinach for lunch at work. I got the recipe from the website Paleo Pot, it's all grain-free slow cooker recipes.

    I made a nice dinner last night with pics. However, I could not download the pics since I had no cable and internet. I will will post them when I get home. It was carmelized fennel, rosemary roasted red potatoes, pan seared duck breast, and a grilled boneless ribeye steak. Everything came out really good and the kids loved everything that was made even the duck!!! My daughter will grow up eating everything, hopefully my son will also.

    What I love about this recipe:

    Fairly inexpensive for the volume of food you get.

    HIGHLY customizable for taste (especially heat....wife and kid hate heat, so I make it mild for them...but when its just me, use andouille sausage and cayenne to crank it up a bit) and using different pasta con completely change the end result. I much prefer the egg noodles but the kid likes spirals more, etc.

    Plus, I just bloody love tomatoes and sausage.

    I hope y'all enjoy it :)

    I have been using a method of defrosting things for years and it hit me the other night that I should post it on here in case you guys dont know about it.

    First off if you dont have a cast iron skillet i suggest getting one, they are a great way to cook just about anything and once they are seasoned properly there is not a better skillet in your arsenal.

    So now that you have a cast iron skillet, the next time you want to defrost say a steak, pull it out of the freezer and place the skillet on the stove, do not turn the stove on, you just want it elevated so that air circulates around it, place the steak in the skillet and leave for a about 2 hours. The cast iron wicks the cold out of the frozen food and it defrosts much faster than just setting on the counter or any other method.

    Just wanted to pass that on.
