    1 1/2" thick porter house cooked in beef fat in a cast iron skillet, medium rare btw

    Fried eggplant. Uh ha bough said

    The mushrooms never make it, sautéed in butter till golden then flambé in Jim fucking beam. Sprinkled with kosher salt da bomb.

    Then to top it, baked potatoe that is so crispy it's like a ruffles, sour cream and scallions.

    Wut?

    Heh.

    As I said, she's spoiled rotten.

    Yea, she likes to wander in and 'supervise' from time to time. Thankfully, she's not a big 'people food' eater, so it isn't a huge issue.

    She will, however, go *to town* on lettuce that you leave unattended. And, sometimes, attended. Apparently, she loves the crunch. The vet said it was OK, so....

    It does not matter that you missed it until now, what matters is that you learn from it and grow, and become a better cook as a result!

    Spend some time (OK, a LOT of time) poking through this thread and take note of that which you see. There's a bunch of folks in here that have taken care of fucking up for you, so that you won't have to.

    Mind what you will learn...save you, it can!

    Easy steak and potatoes idea:

    Steak of your choice, tenderized
    in a small bowl combine:
    a few tablespoons of strong coffee (and I like to add a pinch of fresh ground beans)
    a few tablespoons of red wine
    1/2 tsp unsweetened cocoa powder (NOT hot chocolate mix :rolleyes:)
    1/4 tsp paprika (OR 1/8 tsp cayenne pepper if you want spicy and not savory)

    place steak in a glass baking dish or other flat container. pour the marinade over the top, refrigerate and let it soak in for 4-6 hours, turning a couple of times.

    grill steaks as you desire


    for the potatoes:
    cut up potatoes into 1/4" thick slices
    place in microwave safe bowl and cover with water
    microwave until they have boiled for 3-4 minutes, just until they start to get tender. you don't want to cook them fully in the microwave, just give them a head start.
    while they are in the microwave take a skillet and get it heating up on the stove
    add to the skillet:
    2 tablespoons EVOO
    salt and pepper to taste (just a pinch or 2 will do)
    1/2 tsp rosemary

    drain the potatoes and add them to the hot skillet. stir frequently to make sure they get evenly cooked & crispy. place in serving dish and top with a little fresh grated parmesan.

    The potatoes smell AMAZING when they are cooking...well I guess its really the rosemary and olive oil that smells great but either way :drool:

    i know a lot of white folk that like ceviche lol depends on what kind is made. this is crab and shrimp ceviche. there are some that are nasty lol

    When I was in Mexico I went on a fishing trip and caught a bunch of Mahi Mahi. When we hit the shore we went across the street to the local bar and they made up some serious ceviche, that was fresh!!!!
