    We used to gather bucketloads of crayfish (what we called 'em in the upper midwest) every summer from all the streams and boil 'em up in giant pots.

    Farking awesome.

    The tails were pretty good, once I was able to pull the meat outta them. Not too sure on sucking out the heads. The seasoning tasted a little like a cigar for some reason. Definitely liked the tails though. Very tasty.

    call me crazy..but nutmeg works killer in white sauces. put nutmeg in the mac and cheese sauce. shrimp..just salt and pepper for me.

    if they ate going to be in a sauce, go with a simple and light seasoning, maybe just grill them with salt and pepper, or very lightly with a Cajun seasoning.

    That sucks. Sorry to hear that. Well, to make the best of it, just treat it like any other day, don't think about it too much, and then when you come off duty go spoil yourself at a good restaurant. Thanks for your service so others can enjoy the day safely. Hopefully you don't have to respond to any deep fryer explosions.

    Yeah I'm used to working the holidays with my profession and all plus I have a couple Captains with families so I try and let them get the Holidays off so they can go spend time with them. Thats what I mostly do...I just treat it like any other day but it does get lonely sometimes around the holidays. :eek:

    Maybe next year.

    We're doing a whole lot of nothin this year. The wife and yout are both working the day after, so it'll really just be a day off with more football than normal.

    Next year, we'll be in a bigger place with *hopefully* a bigger/better kitchen and we'll see.
