    Yesterday's dinner--

    I marinated chicken breasts in apple cider vinegar, whole grain mustard, garlic, lemon juice, pepper while I was at work. Broiled them so they stayed moist.

    Kale- parboiled it while in a skillet I sauteed garlic and ginger, then tossed the kale in the skillet to finish.

    Cooked some bacon pieces, then in that pan cooked tiny garden carrots and some onion til caramelized. The bacon pieces got sprinkled on the carrots + kale. I had golden cherry tomatoes I cut up too w some sea salt.

    Delicious! Also gluten-free, grain free, blah blah blah.

    The picture looks bad, of course. I can't take a nighttime food picture to save my life plus am always too hungry to wait to get it right. :)

    After my terrible booboo charring my pork loin last week, I had to make it up with some good steaks. These were marshmallow tender and juicy.

    :woot: that's one of my all time favorites too!

    We call it "prison food" here though :laugh:
    That was one of my favorite foods as a kid. One day the food section of the newspaper did an article on the kitchen at the state prison and how they managed to feed everyone efficiently. They also included a couple of recipes....one of them was for tater tot casserole! :rofl: I asked my mom if she was aware that she had been feeding us "prison food" all this time and the name stuck.

    Haven't posted here in a while. This was my breakfast. Spinach eggs with freshly made cheese and hashbrowns with a few cutie tangerines, which I ate prior to the picture haha.
