    In a pinch you can toss in baby carrots instead. ... and if you're reeeeeeeeeally in a pinch just get a bag (or two) of frozen stew/roast veggies and throw in instead of fresh.

    I like a stalk of fresh rosemary thrown in for really good extra flavor

    Get yourself a chuck roast and salt and pepper it real good. Then sear it in a hot pan, get a good crust on the outside. remove the roast then add carrots, onion and celery to the pan and caramelize them real good. Remove them and deglaze the pan with beef stock. Add all that to the crock pot with whatever else you want...... garlic, herbs, bay leaves, potatoes, peppercorns.... Let that go for about 3-5 hours, just until the meat is tender. Anymore than that and it will just get dry and chewy. That's my basic roast recipe. I like to add my veggies near the end so they don't turn to mush. Good luck!

    I have never been a huge fan of meatballs, I love meat sauce, but not meatballs. Nonetheless I made Spaghetti with meat sauce last night and meatballs for my boys, which got me thinking about about meatball subs. I figured why couldn't I make a meat sauce sub? I made my homemade sauce a bit thicker than usual, put it on garlic bread french loaf, added pepperoni just because I can, then melted mozzarella on it. Holy hell it was awesome, a bit messy, but awesome! I wasn't going to take a pic at first, but after a couple of bites, I decided I had to share.

    Seems like forever since I've been on this thread!! :eek: Everythings been looking great people!! I'm still getting some dental work done so my diet is still on the softer food side but at least its not just soups now!! :p

    I put a small 5lb. boston butt on the grill for 7.5 hours at about 275-300 degrees, had some home made slaw and barbecue sauce, it turned out great...
