    Not sure if you guys had Chevy's where you live, but it's a tex mex chain. There is an amazingly simple recipe for their salsa that has a really good smoky flavor from charring the veggies first. I made about a half gallon for $5...I don't think I'll be buying salsa in a jar ever again.

    2 lbs tomatoes
    1 large onion
    1 jalapeño (I substituted 4, but took out the seeds)
    1 T black pepper
    2 t minced garlic
    2 t salt
    1/4 c Cilantro

    Blister the tomatz/peppers/onion on the grill until lightly charred, then let cool. Core the tomatoes & jalapeños then throw everything in the food processor for 10 seconds. Chill overnight. Smokey & Awesome!

    Made an omelette while on vacation. It was ham,prosciutto,red and green peppers, ad onions. It was very good.....

    the inside of the chicken is spinach, rocotta cheese and some motzzarella cheese

    then its coated with italian breadcrumbs and baked.. once cooked its topped with marinara sauce and some motzzarella cheese. pop it back in the oven to melt and you are good to go!

    Here are some more pics from the vacation a couple weeks ago. We got these steaks from a small grocery store in upstate NY. I was really surprised and they were great quality.

    Here are some lamb chops. We grilled over real hardwood charcoal.

    That was the lamb here is the steak. These porterhouses were 1.75 lb and 2.5 lb the big one was over 2" thick.

    That was the best meat I ever bought in a plain old grocery store...... by far!!!!

    The wife decided we were doing an Asian theme for her bday.

    Good lord. If I win the lottery some day I'm building a full-sized gas fired hibachi in my kitchen.

    the "Red Dragon" sushi was tuna, white tuna, talipa, salmon, crab, about three kinds of veggie, crunchy fish eggs, sticky rice...amazing.

    Fried rice, filet done medium-rare, bay scallops, skrimps...

    Leftovers in the lunchbox today are AWESOME

    Soak your corn in husk for 20-30 minutes and then grill in the husk for around the same time. You will then kick yourself for not doing this sooner. Steam cooks in husks, never dry, and when you husk them, all the little hairs come off super simple.

    This is the standard procedure back home.

    It wasn't until I moved south in the late 90s that I became aware that people *didn't* do this. I was flabbergasted.
