    So, the wife wanted me to 'do something different' with the taters for dinner tonight.

    So, here we go!

    Clean taters. Slice, not *quite* all the way through. Take itty bitty pats of butter and quarter them, and use them to pry the tats open.

    Add salt, some garlic powder. Bake at 400 till done, around 35-40 mins. Coat with shredded colby-jack.

    One beef brisket: a cup of beef broth and a chopped onion in the bottom of the crock pot. Meat on a laurel, to keep it raised up. Pepper, italian spices liberally applied. 6 hours on low.

    Fresh corn, lightly salted and buttered. Add some sour cream and chives to the tater. Dinner is served.

    Looks good Xaks. I do something similar with potatoes - cut them the same, but put in a pyrex dish and pour mushroom soup over it and then bake in the oven until done.

    How long, what temp? That sounds nummy, and I can think of a couple tweaks I'd make to twiddle with the flavor a bit too.

    Depending on the size of the potatoes about an hour in the oven, @ 375.
    Another favorite is bacon bits with onion soup.

    I haven't cooked in so long! I've been so busy with other things around the house my cooking hasn't been around as of late. I made something the other night and it turned out so good. It was a shrimp paella. I will definitely be making it again

    The only part I did differently was I left the saffron out. First, I couldn't find it at a regular grocery store and two, apparently its like 25 dollars an ounce. I can tell you mine tasted amazing without the saffron. I highly recommend making the stock with the shrimp shells like in the video

    I made some home made sloppy joes for dinner tonight, me and the kid (my son) had. It was the leftover hamburger meat that I froze from the last and best batch of hamburgers I made. They came out awesome. I am waiting for the pics to download now. Man were they good..... the bacon smelled awesome!!!

    I guess I'm a lucky guy. After the kids graduated from college my wife quit her job and went to culinary school for formal training. She's always been a good cook though. This is a dish she makes every couple of weeks....poached eggs on sauteed swiss chard & toast. Finish off with some sea salt, fresh ground pepper, and olive oil. Very tasty. She's going to try some Koerean food this week end. I see some dolsot bibimbap in my future..will post pic.
