    Sunday night Corned Beef and Cabbage

    Baked rubbed (spice packet, onion, garlic, thyme & paprika) with sauteed cabbage and rosemary potatoes. Sauteed cabbage was awesome.

    1 issue, the recipe called for 4 hours @ 275 deg. Meat hit 185 at 3 hours. I took it out let it sit then carved, tasted good but was a little tough. Recipe mention "Corned beef needs to be baked long and at a low temperature in order to break down the connective tissue". Cooked in small oven, maybe lower temp longer time? Or just cook it longer?

    I have a corned beef brisket in the crock as I type this.

    I diced up a sweet onion, about 6 oz of fresh mushrooms, some carrots. Tossed them into the crock with about a cup of beef stock. Seared the brisket in a steel pan to get a nice crunchy brown crust on the outside and onto the laurel it goes.


    Toss in a couple russet taters wrapped in foil to cook along with, set to low for 6 hours.

    Yes, you DO need to let a brisket cook that long. The difference is night and day.

    Threw my corned beef in the slower cooker this morning. Standard setup using carrots, potatoes, onions, Guinness, and some beef stock I had in the fridge. Seasoned with the packet it comes with, peppercorns, and some brown sugar. 8 hours from now I'll put the cabbage in for about 30 minutes. Can't wait.

    I'm a hater. Red cabbage is the worst! My mom makes it every year around Thanksgiving...the house stinks for weeks. I still make her keep it on the opposite end of the dining table too - I hate it so much I don't want to even be near it! :eek:

    I'm that way JUST with sauerkraut. I'll eat raw cabbage, cook cabbage in my sausage soup, etc etc but sauerkraut just makes me all oogy.
