    My knife guy is amazing.

    So, he recently found out about my ...uhhh...'lifestyle changes' when I contacted him about sending my Shun to him for it's upkeep.

    He's such an awesome guy. He says to me "What? That ain't right. No man should have one chef's knife"

    So along with sending me back my freshly sharpened Shun, the fucker throws a brand new Misono Molybdenum in with it (middle)

    Even when times aren't so great, it's good to know stand-up guys. He does mail order work very reasonably priced if anyone needs a referral.

    That looks awesome. I grilled Mahi also last night - just direct grilled, not cedar planked :( - But it was still good.

    Quick and dirty version:

    July of this year I lost my job, my family, my marriage, and 95% of everything I owned.

    Then, in driving my packed-to-the-gills Taco across northern Louisiana, a semi tire (as in, the whole thing, rim included) went up under the front bumper and shoved the radiator back into the engine block at 60MPH.

    The impact blew the topper off the back, exposing everything to the elements and slamming the truck about a foot up into the air. Nice shock on the landing.

    Then it started storming. What survived the crash now got flooded. And the truck is totalled.

    So, I made it to Oklahoma City in a rental and am starting a new life with ,,, well, my PC, a box of stuff about two feet on a side, and my clothes.

    Relevant to this discussion: The ex got everything in the kitchen. The only thing I got was my Shun chefs knife.

    Well Xaks, I am trying to think of encouraging words but...I don't know, that just sucks. Sorry to hear man. I remember seeing some posts a few pages back, but did not realize it was that bad.

    There's really not much one CAN say. Shit happens. *shrug* I'm just moving on and seeing what life wants to throw at me next. Don't need to dwell on it and such.

    So, anyhow, back to the thread :p If anyone needs proper knife sharpening (or even just advice) my guy was trained by Murray Carter (and is named/pictured in the book with him actually) and does top notch work. I force him to take $20 a blade for hand waterstone sharpening and he tries to make me take change.

    He goes back to Japan ever few years to get fresh stones and such. And like I mentioned, he does mail work too. So, just holler if'n you want a referral.

    Super simple 90 minute roast chicken with root veg tonight in the cast iron skillet. First time I think I've ever roasted a chicken. I'm usually smoking them, lol. The wife is paleo so it's rare that we get to eat the same thing. She ate some chicken and even a carrot or two.

    Felt like Julia Child bustin out a rustic French(ish) meal. Plus the house smells amazing now!

    I'm stuck in a bit of a habit with chickens....I, like, can't cook them whole without spatchcocking them any more.

    They cook evenly and taste awesome, but they just look weird.

    I just picked up a new CharBroil TRU infrared Grill2GO X200. Small little table top grill... Used it for the first time at the apartment and got a fone call from the maintenance guy asking if there's a fire... LOL
