    Theres a restaurant in Jackson WY that does nothing but game. Mostly elk, deer, buffalo but they have some other things occasionally like emu, kangaroo. Best prime rib ever, the buffalo stuff. Usually have to fight with them a little to get a med-well cut, they do most everything to med only. Leaner meats toughen up quickly.

    Black and blue rare? I've had no problems here locally, outside of B&B which I don't think I've ever tried to actually request.

    You ever wonder about the quality and handling of the beef when you go out? I always wonder in my head when I order rare, but hasn't stopped me or led to any issues.

    oh yes.

    they had this amazingly cute girl do the japanese waterstone work. they did laugh at my attempt in good humor..it is sharp as heck now!! just a tad less sharp than my Mora. i have it in my deer hunt pack. i go to AZ this sunday..hope to drag it thru a deer. they charged me $8, because they said it shouldnt have come that way. the belly of the blade was physically "fatter"..you could feel it budge ever so slightly.

    i forgot to update the thread..sorry. thanks for all the advice along the way.
