Supper on a budget tonight. Salisbury steaks, fresh corn off the cob and mashed taters with gravy.

^^looks good. I'm heating up some leftover elk and elbow macaroni casserole. Pair that with some steamed broccoli and I should be good to go.

It's basically a pan fried meat loaf. I used ground beef, finely minced onion, egg, breadcrumbs and salt and pepper. You can add pretty much anything you want though. I've used worchestershire, mushrooms, herbs, ketchup, etc.

Yeah, hard to see the scale because that's a pretty big pan. They were oval patties about an inch thick. Seared them on both sides then put them in a 400* oven until they were done.

So I went home last night and made Salisbury steaks, and cooked them in the gravy for a little after I cooked the patties, removed them and cooked the onions.

So I made my Salisbury steaks last night so I could take them to work for lunch/dinner since I eat 3 meals at work... And I had my wife make my mashed tators while I was at work so I could just make the meat and gravy.. Well she bought the instant kind and I went home and made my stuff and only tasted the gravy and meat when I was cooking. Needless to say, today when I heated up my lunch... The patatos SUCKED!!!! Like grosser then gross, and I don't mind the instant tators, but these were nasty! completely ruined the food. So I will be going to checkers for dinner today...

    Such a sad day!!!

Tried making jambalaya tonight. Here it is simmering just before adding shrimp. Simple recipe... just sliced smoked sausage, diced onion and celery, can (each) of diced tomatoes, chicken broth and tomato paste. Add seasoning (garlic, salt, pepper, oregano, parsley and a few bay leaves... whatever you like), simmer for 20-30 minutes, then add shrimp for the last 5-10 minutes until cooked. Serve over rice. :)
