Last breakfast in Vegas was at Hash House a-go-go. This was the corned beef hash. Yummy, and filled me until freakin' dinner back home. The missus had one pancake - 14" wide. She made it through half.

 I understand the limited space issue. For the compound butter, make one with sugar, cinnamon, and nutmeg for some hot buttered rums!

You can help a lot by keeping them moist. Like if you have them in a bowl or dish and drape it with a moist towel.

Conversely a microwave session just prior to eating, covered with said towel will help bring back some pillowy soft goodness.

The microwave idea will definitely work. I think a plastic bag would work best, just like when you have a bag of store-bought hot dog buns that have gonna a little south... Throw the bag, opened just a bit, into the micro for 30 seconds. You end up with a bag of soft steamed buns, ready to commence grubbage.

    Also a good idea.

Anything hat will help keep moisture in (sealed container or damp towel) or help reintroduce moisture (steaming them in a microwave) will make day old (or week old) buns a lot better.

I think I'm adopted....cooking at my parents house is always an adventure. Found out today that my mom does not own a cheese grater :-/ How the hell does one go through life without a cheese grater?!?!? And she doesn't like olive oil?

She probably got some bad advice and used EVOO to fry something and it was all nasty and bitter tasting.

Taking a little mini-vacation later this week. I normally don't get to eat out when I go to Jackson/Grand Teton in the summer because the restaurants are too fancy for me to show up in my grimy camping/hiking clothes. But they do have some amazing restaurants down there  Gotta double check that they are gluten free friendly but here's my short list for dinner:
    Lift Restaurant
    Cafe Genevieve
    Nani's
