Theres an Italian place in MD that has the best saute'd mushrooms. It looked like some kind of butter garlic sauce but oh so very good! I dont miss much about MD, some of the food was great though.

We used to raise beef cattle and the butcher would hang them in a cooler for 21 days before cutting up. Best Beef Ever. Now days, they ain't got time for that shit!

Turning brown in the fridge is just aging, doesn't change the texture, but does improve the flavor. My beef now comes from the store :( but I always let steaks sit in the frig til it browns, then grill or freeze.

The best steak I ever cooked was left in the fridge a few days too long, but I was hungry and drunk. :)

Turns out it's a reaction to zero oxygen, hemoglobin is no longer red on meat surface yadda yadda. Anyway, after a week I opened the vac sealed bags, no odor, no funkiness, and they were perfect when cooked. Success! Now I know.

That steak that was left a little too long had a "smell" to it. It was completely brown. If I hadn't been drunk I probably would have trashed it. Now I know. ;)

One of the best steaks I've ever had (in a restaurant) was aged 5-6 weeks. Temperature and humidity controlled of course. But that flavor. Man there's nothing like it.

    Berns Steakhouse in Tampa.

Eaten there more than a few times. Awesome steaks and the dessert room is freakin awesome. Ain't cheap but worth it on those special occasions.

@horstuff .... From the other post you referred me to. This one is same price to the the Sam's Club, Foodsaver FM5380, and Costco Foodsaver FM5480. What is difference? Never bought one before so not really sure what I'm looking at, or for in one.

I don't know what the differences are, would have to research, bought that a long time ago. All I know is that it works great, zero complaints.

It was too damn hot outside to run to the grocery store for dinner stuff earlier (still freakin hot - 95f @ 9:30pm) so I raided the freezer. Thankfully I have a vacuum sealer and they do a great job. Smoked brisket, burnt ends, smoked ham and sun dried tomato/garlic/chicken sausages. Yum!
