First pot roast of the season. Still 80 degree out today, but sounded good. :notsure:

...^^^... That "pot roast" photo stuck in my brain last night and today I wanted POT ROAST ... :hungry:.

It's rare that food does that to me since I eat out almost all the time ... I might buy a crock pot today :) and learn how to cook it.

My grandmother made the best pot roast when I was a kid.

It’s really simple/traditional mexican breakfast though usually with beans and no meat.

Take dry corn tortillas (stale-ish or left out overnight to dry. Can also force dry in a microwave or oven/toaster oven), cut them into whatever strips/triangles and quantity you want. Heat some oil to medium/medium low on stove. Add tortillas and cook until browned.

    Remove tortillas, let dry.

Add a little more oil to the pan, add your choice of salsa and let it cook in the same temp oil for a few minutes. Then add eggs.

Add tortillas back into pan to re-heat. Then serve when eggs are cooked to your liking. I’ve seen them just fried in salsa, in that pic they’re basically stirred around to scrambled. Cilantro and cheese is optional.
