    Long, but fun day at work today.


    Checked in with wife late afternoon and she said she'd wait on suppatime for when I got home later on.


    Some squealers (catfish) happened....did some other sides for her. Mine was served straight up with a pair of jalapeño cheddar hush puppies.

    Not at all, comes out really juicy. These were done on my Genesis glasser, just use a direct heat with an indirect smoker box with wood chips. Works just as well and even better on my Kettle, I just use the chips more direct.

    Once of the best tasting morning meals I've made in a long, long time.


    Started off with a mushroom omelette.....tossed on some pico de gallo......topped with guacamole.


    Three strips of thick sliced bacon cooked in the 325 degree oven on a parchment paper covered cookie sheet for 25+ mins. I dusted the top with fresh ground pepper.


    Flavors in this simple meal were spot on. I may never cook bacon any other way.

    Mixed that ^^^^^ up really well and then dredged a large hunk of Atlantic salmon in it......dropped in some shrooms and let it all rest in the fridge for an hour or so.



    Oven on 450, then swapped over to high broil........let it ride in there until it probed 140-ish....should have let it stay a bit longer as the carmelized corners were insanely delicious and would have been better to spread that love to the rest. :)

    I kicked up the flavors a notch or two this morning.



    Did a few slices of thick bacon with pepper all over 'em in the 325 degree oven. Too dang easy.


    Sautéed some portabellas in olive oil with a few shakes of Frank's Red Hot over them.....then added 2 eggs to get an omelette started. Right about the time it crossed the finish line some pico was tossed in, too. BAM.


    Guac for breakfast may be my new favorite side.

    Went kinda cave man on my grill with straight pecan wood fire. Dunno what kind of
    Fish these are. they came from my sister's FIL and I have no idea how long they had been frozen but they were vacuum sealed individually and had printing on them like he bought them from somewhere. I soaked em in some brine with lemon and ginger for a couple hours and then put lemon pepper seasoning on them. The first piece I tried was pretty fishy but the others tasted ok... Long story short, I'm glad I also cooked a couple burgers but it was my first attempt at grilled fish and will be good practice for my beach trip in a couple weeks. Also browned half the burger and stuffed some shrooms
