Howdy, everyone.....hoping to get some insight and suggestions from those in the know.

I've been using a Lodge cast iron skillet for a few years now........handles a heap of my indoor cooking chores like veggies and other sides.

The surface of it, though....isn't very forgiving when I try to cook fried eggs, scrambled eggs, omelettes and such. I am sick of using non-stick stuff that has poor heat transfer and is likely poisoning us with the non-stick junk flaking off.

I'm wanting proper cast iron skillet or two that can handle the lion's share of my indoor cooking.

    Smooth surface.

    Made in USA.

Something that I'll use and enjoy into my elderly years and hand over to my son.

    Thanks for your help.

FWIW....I'm not opposed to adding another LODGE skillet, but I'll need to do some serious work to the inner surfaces to smooth them out and re-season them.

I'm thinking that I may be better off to just start off with one that is smooth & slick.

Mine were a little rough on the bottom, but I got some steel wool brilo pads and I use them to clean mine which polishes the bottom (in my my right?) I've seen videos where people get a polishing wheel and just a drill to smooth iut the bottom and then just preseason the pan... Or you could just keep parchment paper and put it down on the bottom and cook on that...

Sorry, bro......but.....I have no idea what I just read.

    Top 5 in what ???????

Seems like a dumbass contest unless the voters actually taste what you are making vs other entries.

Deviled eggs are too damn easy......don't overthink 'em......just add hot sauce & bacon and you'll beat anyone.

The rest of the list is bullcrap competition stuff that I wouldn't get outa bed to fool with.

    Hmmm....let's see....

1.5 to 2lbs thin steak chopped/diced into bite size-ish pieces (I used top round this time I think it was :anonymous:)
2-3 potatoes diced small (used yellow taters this time)
    1 poblano seeded and diced
1-3 jalapeños diced depending on your heat preference. I usually do 2, one seeded and one with.
    1-2 cloves of garlic minced
1/2 to 1 whole yellow onion diced smallish(again, preference. Wife doesn't care too much for onion so I roll with half)
    3-5 roma tomatoes diced
1/2c or more chopped fresh cilantro
    1/2c water
2 tbsp Knorr tomato boullion w/chicken flavor (the red top one)
Salt/pepper to taste. Although I usually hold off the salt since the Knorr is salty.

    1. If using taters, dice small and fry up real good in oil. Drain and set aside. Error on the side of dark taters to hold up better to the liquid later. Also, lightly salt the taters.

    2. Brown the meat and set aside.

    3. Using same skillet, sauté all veggies minus cilantro if using.

    4. When veggies are softened up a bit, say 5-10 min, add meat, knorr and water.

    5. Bring to boil, drop down to simmer and cover for ohhh...15-20 min. Watch the liquid and consistency. You want it to reduce down a bit and thicken up. Remove the lid and let it reduce down if needed.

    6. Add the cilantro if using, stir in and let sit a few couple minutes.

That should be about it! Enjoy, hope it works out for you!

And drain a can of salad shrimp, the little bitty ones and add in. Fry, then pour brown gravy over it on the plate. Good shit Maynard!
