    My son came home from college for the first time this past weekend (just started as a freshman a couple weeks ago) so we spoiled him with his favorites. I grilled the T-bone and shrimp and my wife seared the scallops inside and made the creamy mashed potatoes.

    I did spam hash this weekend with fresh potatoes, onion, and red pepper. The whole time my dogs were staring at me like I was the only pretty stripper in the club. They know I have a can of spam in my hand before I've even opened it. It's uncanny.

    That's great! Not sure I've ever given my dog spam. I feel like a bad parent now. I will remedy this the next time a can comes out.

    Ya they are actual waffles but they are awesome. Been wanting to make my own, a little place not far from us does them. Walk in and it smells great in there.

    Used this recipe in the Instant Pot. The flavor to me was like a barbacoa.....but it was tasty, and it worked well for the tostadas. Also, I used the full 4 tbsp chipotle and half the cumin, and juice of 2 limes. Hope you like it!

    Had some delays on my cook today.


    Spent much of the afternoon at the police department. A troubled employee was terminated yesterday afternoon. He decided to text me last night as I was serving dinner to my family and threaten me. My experiences this afternoon with the particular officer were less than stellar. I'll see how this plays out. Been a supervisor for this company for the last 24 years and have been involved with a heap of terminations.....this'un is the first one to give me pause for alarm.



    I'll leave it at this.....there are some very disturbed people in this world. Why do they commit their acts like cowards ?






    Anyways.....on with toinight's grub.




    Being pushed for time had me rolling inside, vs out on the grill. GRRRRRRR !!!!!

    Had some wings soaking for 24+ hours in a mix of Crystal, L&P Roostershire and Allegro.

    Since I was frying vs. grilling.......did a small batch of onion laden hush puppies.

    My puppies were sitting by their Momma and waiting for that Boy to show up for dinnatime.

    He showed up just as the wings were going into the fryer.....right on time.


    I'd done a batch of mashed potatoes, Brussels, oak-ree, hush puppies and the wangs.





    He killed this plate and two more just like it.......then killed more wangs as I gave him the run down on recent developments.

    He said everything was great. Wife did, too.....though she opted for leftover salmon vs fried wangs. I simply wasn't hungry.


    I'm glad T-Rex likes the okra.....he's had 'em fried before and hated them. Good to know that grilled/broiled with olive oil, s&p and balsamic vinegar is the ticket.




    Salmon & eggs for breakfast is where my mind is dialed in as far as food goes !!!!
