    There used to be a place around where I lived in MI that did them with a real high quality cinnamon. They were some of the best I've had. Now I may have to try my hand at them this weekend. :)

    You'll get much better results than I did.....I used some really cheap cinnamon...Walmart store brand. I've never really compared different brands on it. Figured it was like salt....it was what it was. You have me curious now....want to try some different types soon.


    The recipe I used was super easy....right off the Lodge cast iron web page:

    I think I goofed and used too small of a skillet. I saw later on after reading below the recipe they recommend a 10".


    Sure was a nice change up for breakfast...wife & son really liked it.

    I'll let you know how it comes out. We have some cheapo cinnamon I use for things where it doesn't need to stand out and then I have some higher end stuff I use when I want it to really stand out. Using good ingredients does really help.

    As for the lodge cast iron I will make sure I use my 10" one.

    Anybody made carnitas at home? Have a pork shoulder in the freezer and I think I’m ready to eat it soon..

    Have found a few non-traditional recipes online and that’s about how I’ll be attempting mine. Not sure if I want to braise, slow cook.. crisp with a torch or crisp it by a quick pan fry.

    Hoping to get as close to legit carnitas as I can, without being legit. :)

    Typically I do all my shoulders on the smoker but occasionally I'll make carnitas in the crockpot. Usual suspects for spice and flavors. After it's done in the CP I spread some thin on a cookie sheet and put it under the broiler to crisp up.

    My broiler doesn’t work so torch or pan fry is the only road to crispy.
