    We do carnitas in the crockpot also. Nothing wrong with that. I do it in the smoker also from time to time, but I think I actually prefer the CP - it stays moist.

    I have a friggen stovetop pressure cooker coming in the mail. I should get it Tuesday. Went with a Fissler.

    I can’t wait to explore that tool some.

    ^^We have used a stovetop pressure cooker for years and never had any issues. Just follow instructions to make sure the vent hole will not get clogged. It is an awesome instrument if used right. We now have a Instapot that do pressure cooking also, so we don't use the stovetop model anymore, but it is still there as a backup.

    Haha. Thankfully (hopefully?) the new models have better safeguards. I bought the best version.

    Maybe my maiden voyage will be on my backyard burner. :)

    man they were good! I have some banger sausage that I'm gonna do a video with soon but I don't really know what to do with it or what they even taste like. I'm making some turnip green soup tonight with some of DSR's chorizo and I have high hopes for it

    I'm actually using canola but any greens work, and then chicken broth and some beans and sausage in the crockpot... its the only way my wife will eat greens

    i used this one. the key was the oven cooking. i couldnt ever get the insides cooked, without turning the crust to black carbon.

    FWIW ... I live part time in US and part-time in Thailand for the next 18-24 months until my Thai wife can retire to the USA.

    I will post some Thai food pics from my last trip and I go back to Thailand soon and will take more pics of Thai food. The food there is great and not expensive, so we eat out a lot when I am there. We live in a small town in northern Thailand called Chiang Rai and we (wife, me and 10 y/o daughter) can eat dinner out in a nice local restaurant for 300 Thai Baht (less than $10.00 USD) with tip, and have food to take home.

    We had a big pre-wedding dinner with lots of food for 22 people with alcoholic drinks that lasted 4 hours and the bill was less than $300.00 for EVERYTHING ..... ...Includes .... (private room rental, decorations, music, 4 waiters, beer & liquor, 7 main different courses that could be shared, desserts and a big tip).

    FWIW ... The food is fantastic ... but ... in general, 2 main things that I don't like about eating out there in local restaurants ... when we eat as a family ... our food never comes at the same time, they bring the food as it is cooked and hot ... and the table napkins are like Kleenex Tissues.
