    Exam day......kid's were up late last night studying for exams that take place today.


    Neves are on high alert.


    Got word they would swing by for breakfast.......T-Rex gave me 45 mins notice. I was chilling with the dogs getting my java-on when the request for breakfuss came.


    45 mins.......turned out to be the exact correct timing as it was hitting the counter when they walked in the kitchen. I let them do their own eggs after getting a couple over easy for my wife. She's grown to like the over-easy like mine...but she likes them salted....I roll with heavy amounts of fresh ground pepper.






    Oven preheating while the biscuits get rolled out and cut. The last bit of dough was made into a bone-shaped thing the dogs split.

    Made a meal last night that was bigtime easy to do.....didn't take long and cleanup was simple and fast, too.

    Not bragging but the meal was off the freakin' chain delicious according to my wife....and then the kids that joined later on.


    There is a local restaurant that's been here long before my wife and moved to the area 20+ years ago. The first meal I ate in this town came after a long day at work with my mentor who wanted to go out somewhere different for drinks and dinner. We asked around and were directed to The French Market Grille. I distinctly remember ordering their Cajun martini (large martini with a Mason jar filled backup :rofl:). It helped me relax like no "single" drink prior to or since. My meal was a bowl of their oyster & artichoke soup. Hands down the best soup I've ever had up to that point.

    We couldn't wait until a few weeks later our wives moved on down with us and we each settled into our homes. We'd all meet up for meals and often go to The French Market Grille. Wife's favorite soup from there is their she-crab soup.


    For lunches.....we've always loved their po'boy sammiches.

    It's a culinary synergy that's greater than the sum of it's parts.



    Last night's dinner was done from the comfort and warmth of our kitchen. Too cold & rainy to want to go out to eat.

    I figured I'd bring her some flavors of that restaurant to our table.

    These had a homemade Cajun Rémoulade sauce and the skrimps was fried in my always favorite House Autry Seafood mix. Been onboard with their goods since I was old enough know nuttin' about nuttin'. Good stuff.


    Wife did want a some Duke's on her's, too. It set off those ultra-sweet Romas really nicely. I followed her lead and, boy howdy was it a good idea.


    The French bread was toasted slightly with some lemon juice brushed onto the outer crust first.


    Simplicity that came through on the table. All I had to do was get outa the way and let it happen.

    The soup......now that's where I went freestyle. No prescribed method. No recipe....just let it ride with a base of the Cook's Trio-carrot, celery & onion sautéed in butter with some ap flour shook into it. Garlic was smashed and added towards the end of the sauté action......then the half & half, nutmeg, thyme, ground up pepper, crab boil, salt and finally the crabmeat.


    Very deep & rich flavor.


    She said some stuff that was a stellar endorsement of said soup that I can't repeat here. Didn't realize soup could get that stamp of approval. upload_2018-12-11_10-59-18.gif Heckyeah !!!

    Rémoulade Sauce:

    1 cup Duke's mayo

    1/4 cup Creole mustard

    2 tbs horseraddish

    2 tbs Leah & Perrin's roostershire sauce

    2 tbs lemon juice

    1 tbs ketchup

    2 tsp Tabasco

    1 tbs paprika

    1 tbs fresh ground pepper

    1 tsp honey

    1 piece celery diced up

    sea salt to taste

    *substitute & play around with it as desired

    I do shrimp po’boys every now and then. Got my in-laws hooked on them. Makes for an awesome meal. Soup sounds good. We did chili last night. Was cool out so it hit the spot.

    You tried Kibbeh? Grew up eating a lot of different types of food and love some middle eastern food.

    When a really close friend of our family (like and aunt and uncle to me) was still alive she made some of the best kibbeh I’ve ever had and she was the only one I would eat the raw version from.

    So.....things 'round my hacienda have been off-kilter just a mite as of late.


    My Bride & T-Rex have been fighting off sinus infections. I've been spared. Thinking it must be my proclivity to lay down with our dogs....and their antibodies flowing through my bloodstream. Not real world science.....but it's werkin' for me.





    I ventured out into the world today.....and came home in one piece. Christmas shopping was the cause.



    Home at last and chillin' with my ferocious wolfpack.


    First was the OG.....our original girl, Molly.

    That dog & I have seen each other through a few surgeries....on both sides.....and are joined like velcro. One of my life goals is to get a Labrador that has her sweet nature. That dog would be a lottery winner.



    Didn't take the "puppy" long to find us and join the frey. Hellen was named by the lady that whelped the litter....and the name had some meaning....first four letters especially. Mrs. Kitty (the whelper) named her that due to her propensity to break the litter out of their barriers and hit the ground running. She's full of vinegar and goes after squirrels like nobody's bidness. She brought 'em along with rabbits and other vermin up to hand. Hellen is a name that stuck for a reason.

    There are two ways that my family likes hotdogs..........chili-cheese/slaw.......and mustard & sauerkraut.

    The hot dog chili was made up following a recipe that we've all grown to know and love. It says 'Merica with the first bite.




    T-Rex wanted his "The old way + the new way".


    The old way is with American cheese and my hotdog chili.....the new way is, thanks to Mrs. Hornet 22, mustard + sauerkraut (my favorite).
