Wild turkey breast stuffed with chèvre, pine nuts and spinach, indirect roasted over charcoal
    Served with wild rice blend
Sauce was turkey stock, heavy cream, and roasted yellow peppers.
And some kale with red wine vinegar sprinkle

Pretty good but I wish I would have had time to let the sauce thicken up a lil :)

Chicken on the pellet smoker yesterday.

Sprinkled with a homemade rub; brown sugar, salt, black pepper, white pepper, cayenne, garlic, cumin, onion powder...not sure what else. Braised in melted butter and apple juice for about an hour at 250 degrees.
    upload_2019-7-15_8-41-1.jpg

Added a light coating of BBQ sauce and turned the heat up to 275 to caramelize a little bit.
    upload_2019-7-15_8-41-27.jpg

It turned out great. Especially the breast pieces that can easily be dry was really juicy and tender.

On a facebook food page we were talking about polish kielbasa. I love that stuff. I will heat it up in the grill, cut lengthwise in slices and put on toasted bread with chutney and cheese. Usually add tomato and onion also; on these photos I did not. Put on grill to melt the cheese. Awesome snack or a quick lunch.

Also, another snack that the kids love. Cut the kielbasa in coins and put little pieces of mozzarella cheese on top. Melt the cheese (under broiler, in grill, microwave....) and add a little garlic & herb seasoning. upload_2019-7-15_8-50-21.jpg

Those grilled sandwiches are a staple with BBQ where I am from. The traditional way is to do cheese, tomato and onions and then put it on the grill. Butter the outsides also for a nice toasted crust.

Turkeys were on sale for like $.98/lb so I picked one up and deconstructed it and brined it over night. The breast became some very nice Sammie material and the leg quarters and wings will be a pulled buffalo "chicken" this time tomorrow
