    Chinese Comfort Food. It’s a corn and meat sauce over rice. I used beef, but it’s typically pork.

    I’m in need of comfort.:(

    back to bone stock.
    I brown a tiny bit of ginger and the white part of some green onions. Brown some beef. (Is supposed to be pork). Pour in a can of creamed corn. Pour in maybe a half cup of chicken stock. You can use water and bullion. Simmer. Season with sesame oil, white pepper, soy sauce. Thicken with a corn starch slurry. At the end when simmering. Pour in a couple of beaten eggs. Top with the green parts of the same green onions.

    SPINACH BALLS

    2 cups herb stuffing (dry)
    2 pkgs. frozen chopped spinach
    2 small onions, chopped
    4 eggs, beaten
    3/4 cup melted butter
    1/2 cup Parmesan cheese
    1 tsp. garlic powder
    1/2 tsp. thyme
    Dash of pepper

    Cook spinach and drain WELL. Combine stuffing, spinach, onion, eggs, butter,
    cheese, and seasoning. Chill at least 2 hours. Shape onto small balls. Place on cookie sheet and bake 350 degrees for 12-15 minutes
