    Sorry.. I just saw this.. and yes.. I had the fajita pan preheating in the oven because I don't own the right sized cast iron pan.. but if you do you could make it in one pan for sure!

    I also use a thermometer. Not necessarily a "need to" but a "want to". Anyone can grill a steak, and with a little experience you can get close to knowing when it is medium-rare, medium etc. but if you can pull it off at 135 instead of 145 because you know exactly when you reach that point, why not. Use science to your advantage.

    I use an external thermometer and a stopwatch. Get the grill to 450, 1 1/2" steak, 7 minutes a side. Rest for 5 mins. Perfect.

    I use an instant read. So do most pro chefs. Makes it easier to tell when you’re in the pull and rest zone so that you end up in the right spot.
