    I have a whole beef tenderloin I'm gonna do a butcher video on tonight and do some steaks this weekend... I plan on making a really thick mushroom gravy and coating the beef tips left over in that (after a good sear) and wrapping them in canned crescent roll dough and deep frying them... Beef tip Wellington ... This will work right? I know I'm missing prescuito or whatever and not exactly puff pastry but in my head it sounds pretty spectacular

    Touche... They were the best beef tenderloin ive ever eaten... Hope the steaks are half as good

    So this was the first time i have reverse seared a steak... I cooked all 10 filets at the same time to ~115° and then 5 of them fit in my castiron at a time so 1 minute or so per side in bacon grease and butter in 2 batches and I had 10 perfectly medrare with a perfect sear... Very happy with this technic for multiple steaks at a time

    1/2 to 1tbsp chipotle en adobo (I use the diced up stuff, more or less depending on heat but it ain’t too hot honestly)
