    Bread is an almond flour, coconut flour, protein powder, oat fiber blend that I created to keep me from going out of my flipping mind. Hahaha. You cook it in the microwave for 90 secs. and then toast it lightly. it is 4 grams of carbs. Has great texture and really good flavor.

    I will give it a try. Pancakes have been hard because almond flour browns too quickly. I have developed the perfect Belgium Waffle recipe though. Tastes just like the Krusteaze Mix. I figured I can either hate my new reality or embrace the challenge and create a sense of normalcy minus the carbs.

    Belgium Waffles

    Makes 3 waffles

    In a Gallon ziplock bag add:

    1/2 cup Almond Flour
    1 tablespoon Coconut Flour
    1 scoop Isopure unflavored whey protein powder
    2 tsp Baking Powder
    1 1/2 tablespoons Swerve powdered sugar (or powdered monkfruit/erythritol)
    1 tablespoon Monkfruit Erythritol
    1/2 tsp Xanthum Gum
    1/4 tsp Salt
    1/4 cup Oil
    1 Egg
    1/2 cup Unsweetened Almond Milk

    Mix well until fully incorporated

    Seal Bag cut tip of bag and pipe onto oiled waffle iron

    Bake until golden brown

    Enjoy

    6 grams of carbs

    I hear ya...

    In a microwave bowl
    Small round for buns or muffins
    Rectangular for sandwiches

    1 tablespoon butter
    1 tablespoon sour cream
    1 tablespoon cream cheese

    microwave 30 secs until softened

    add

    1 tablespoon almond flour (I use Costco)
    1 teaspoon coconut flour (bobs red mill)
    1 teaspoon oat fiber (can delete this just add a teaspoon of coconut flour...adds 3carbs)
    1 teaspoon isopure unflavored protein powder
    1 teaspoon monkfruit erythritol (Costco)
    1 teaspoon baking powder
    1 egg
    Stir well until fully mixed
    Microwave for 75-90 seconds depending on microwave. (Shouldn’t be gooey in middle)

    loosen with knife. Turn over to release from bowl.

    slice in two

    I prefer to toast mine lightly but works just fine untoasted

    I found hotdog tins on Amazon and cook lightly covered with foil in our air fryer at 350 for 10-12 minutes. I uncover a couple of minutes early to let it brown.

    total carb count is 4.5

    *monkfruit erythritol isn’t processed by the body the same way sugar is so no carb count

    *oat fiber isn’t either because it is made of the husks which is insoluble fiber

    Thank you. I’ll be trying this out. I have almond flour (got it from Aldi). Planning to pick up coconut flour also for a recipe my wife wants to try.

    Awesome...My wife jumped on board with me when I made the change. That has helped a ton...we have both lost over 30 lbs and my A1C is in the normal range now. I have some cake recipes I can share later if interested.

    I've read many a recipe....I take a little from all and make it work for me, so this may not be a "real" ckn adobo.

    But here you go,

    2lbs thighs (bone in/skin on)
    1C soy sauce (I use Silver Swan for this)
    1/2C white vinegar (I use Datu Puti Cane vinegar, but regular white vinegar will work)
    2TBSP sugar
    1TBSP ground black pepper
    3 Bay leaves
    4-5 cloves garlic (I leave them whole, but give them a good smash to break them up)


    In my dutch oven:
    Brown the thighs in 1-2 TBSP oil
    Remove thighs, and drain excess oil
    Mix in all the other ingredients and put ckn back in skin down, bring to a simmer, cover for 15min
    Uncover and flip the ckn. Continue cooking another 20-30 min uncovered and occasionally baste the ckn with the sauce.
    Serve over white rice!

    Fall is definitely here in the Northwest. Seemed like a great day for chicken pot pie. Not Keto friendly but then again neither am I. It certainly fits within my carbs per meal (15-20) allotment though. It hit the spot!!!

    I was thinking if you worked it into some ground beef or venison burger and then grilled up burgers that would be good too??

    maybe a meatloaf with this as the glaze...okay now I’m hungry

    Meatloaf

    Pre heat oven to 325

    1lb ground beef Or ground venison Or ground turkey

    In a bowl add 1 cup crushed Costco croutons.
    Combine with 1/4 cup of milk, 1 tbls of minced garlic, and 1 egg lightly beaten

    let crouton mixture soak for 15 mins then work into ground beef or venison or turkey
    Mix thoroughly

    put mix into loaf pan

    Sauce

    Mix thoroughly 1/4 ketchup, 1/4 cup bbq sauce, tsp of mustard powder (Colman’s), 1/4 tsp nutmeg, and 3 tbls brown sugar (compressed)

    spread over top of meatloaf

    Bake for 45 min

    check at 30 and adjust time if necessary

    **We now do a low carb version of this using almond flour bread croutons, low carb bbq sauce, and Lakanto brown sugar substitute

    This is great second day as meat for burritos
