    Teba Shio (Salted Chicken Wings) 手羽先塩焼き with Tater Tots with Elote Sauce and Cotija Cheese

    Soaked chicken wing flats in Sake then patted dry and seasoned with black pepper and sea salt.

    Grilled chicken wings until crispy and dark golden brown - 175 IT.

    Air Fried tater tots at 400F for 12 minutes then topped with Elote Sauce (Mexican Street Corn White Sauce) and Cotija Cheese.

    I binge on the occasional air fryer recipe videos and the guy that does Pro Home Cooks has a few. We've talked about getting on off and on but never pulled the trigger. This is motivation :fingerscrossed:

    Wednesdays. dinner is such a challenge because Wednesdays are the day I pick up my CSA box. essentially a mystery box full of farm fresh veggies picked that morning.

    today, I threw open the box peeked in and saw carrots, kohlrabi, spinach, and squash. then I saw my leftover Foccacia bread!! I had to make something I could clean out my bread with! well there we go. VEGGIE STEW! my wife was blown away. she loves veggies and really tries to get me away from cooking huge swathes of meat. well, okay honey.

    here it is. a big hot bowl of life extension. it was great.

    This really turned me on to cold proofing, I did some sub sandwich buns and some cinnamon rolls since that I cold proved, I just feel like in my head, you can't over proof it when it's in the fridge so basically overnight+ like up to 5 days will produce near identical textured breads... But I really have no idea what I'm doing with yeast bread lol... This is all just head cannon

    could easily use corn instead. but i love hominy. i even added a can of white beans.topped it with cheese and crushed tortilla chips.

    I made a wild caught smoked salmon, cream cheese, capers, red onion, green onions, beefsteak tomato, sprinkled with some coarse pepper ... on a toasted everything bagel --- for my lunch today.

    I tried to copy this from Einstein Bagels and came close. ...... Not bad for my first try. :hungry:
