With the left over chicken i didnt use for the honey garlic tenders. I made some regular air fryer tenders and with the left over stuff from the fish burritos i dont think i posted, i made some chicken burritos with some seasoned rice, and left over toppings. Ballin on a budget

 

Smoked tritip for dinner tonight

 

Spicy tamales (CRAVING!) and chips w/ beef and chicken fajita meat and salsa verde.

 

Homemade organic-pork carnitas slow-cooked in lard. I made a carnitas torta and a Cuban sandwich with 'em.

I love Cuban sandwiches, but I’m really fond of its sister - Media Noche. The egg brioche kills it!
Damn hard to find the bread though, unless you live in Cuba or Miami…

I hear ya on finding Cuban style breads.

For the regular Cubano, of all places, Target's house brand soft french bread baguette is the closest I have found to the right texture and flavor for the non-eggy bread version, around here anyway. And there are some really good bakeries here. lol

 

Thankfully French bread is a staple here. Kinda like asking for a bagel in NY. (Some say it’s the water, lol… it’s actually the humidity). Thanks for pointing out this source for others. It could be Target distributes from here for that?

 

Wifey made a frittata with some eggs from our chickens this morning.
Great breakfast on a rainy day here in California.
