What did you rub on yer taters and what's on yer meat?

 

Potatoes were coated with olive oil, Italian seasoning, salt, pepper, and Parmesan Cheese.

The tenderloin was cut and woven and rubbed with Famous Dave's Devils Spit and the last 5 min topped with Famous Dave's Texas Pit BBQ Sauce.

Both the tenderloin and the potatoes were on a foil lined sheet pan in a 425F oven for 25 minutes

By cutting the tenderloin and braiding it, you can season all the sides of the 3 pieces and get that rub inside and out.

 

Did you cut into three strips and then braid or two partial cuts leaving an intact end to hold it together?

I either run a finger or a knife steel down the centre of my pork tenderloins and then stuff them. Tappenade is a favourite but I have also done a spinach/feta/pine nut mixture. I've done the same with venison tenderloins.

Then I lightly grease and season foil, season the outside of the loin and wrap in foil. In a dry hot cast iron pan, the loin will brown through the foil, turn every few minutes and finish to medium rare in the oven. Slice medallions to plate.

There is nothing quite like the visuals of stuffing tappenade in a pork tenderloin.

MIL gave me this George Foreman pan for Christmas. 80/20 beef. Worcestershire. Flip once. Leaves a great sear. All the grease runs to the side. I'm diggin' it!

 

I have a Lodge cast iron grill pan. They work great.

 

I’ll have to take a look… daughter moved out and has a few things, but starting out. Has gas stove/oven though.

 

Wife is outta town….doc doesn’t need to know!
