    No prob mon, that looks really good. I got to bust out my slicer last night for some roast beef sandwiches. It works like a charm.

    Venison backstraps and eggs over sleazy with some butter garlic whipped mashers. Splattered with some Frank's. I put that shit on everything!!

    How did you do the back straps? The last time I had back straps they were smoked and sooooo delicious!!!

    I lightly coat the straps in olive oil, sprinkle with sea salt, fresh cracked black pepper and some chile powder. I then pan sear it in some butter for about 2 minutes on each side. I cut them THICK because I love a bloody cold centered cut of red meat. Delicious. I do venison every which way, but this is one of my favorites for sure.

    That sounds good, I would not be sure if I would like Venison medium rare let alone rare, maybe medium. That is just me, I like Venison it just has to be done right. Rare I could not do.

    Sounds good. I do my wild duck breast the same way, except I marinate in Heinz 57 for a day first, and it's the only way I like it. Everyone gripes about how wild stuff is gamey and has to be "hidden" in jalapeno-wrapped bacon to be edible or whatever. I think 90% of the time it's because they overcook it.

    Toughtaco - I've had venison backstraps smoked as well and it's pretty good, too! My only gripe about smoked strap, boar shoulder, etc. is that the low fat content makes for a really uniform, almost boring texture. I need some fat in there. :D

    Yeah but whatever this guy used as a marinade was awesome!!! I couldnt believe it when I ate it. I have to get my hands on some wild boar meat. I was watching a cooking show that a chef claimed wild boar bacon will make you never eat regular bacon again. I was going to try some exotic meats for this holiday season but I ran out of time. Might have to have another party soon.

    I've found that proper field dressing, butchering and aging (controlled) is crucial to preventing venison from tasting "gamey". My wife was a tough sell on venison at first. I let her try meatloaf, meatballs, stews, then finally steak. She now agrees that it doesn't taste gamey at all. I've seen guys do piss poor jobs of caring for their venison and I'm sure it reflects at the dinner table. I've converted many skeptics on the subject. I love to cook almost as much as I love to eat and hunt!
