    I picked up some Bachan's Japanese BBQ Sauce and figured I'd give it a go on a burger.

    After tasting the BBQ sauce straight, it is very salty so I was a little gun shy on how much to use. It could have taken a bit more. All-in-all, though, pretty good.

    Accompanied by a keto bun, mayo, pickles and corn.

    Any good? Is it cheese based?

    I did keto a while back, considering it again but I am eating way less cheese now. I used to make a calzone dough that was basically just cheese based bread, stuffed with cheese and meat. It was.....it was a lot of cheese.

    Costco stopped carrying keto buns so I figured I'd give the Keto Culture buns from Walmart a try. There's a slight odd smell (looking at the label it's got to be either the inulin or chicory?) but thankfully it isn't strong and you don't taste it after you put your fixin's on it.

    OK OK it has some toasted almond flour and coconut flour and juice of two tangerines and two eggs and some herbs and spices, but it is all beef.

    Sorry not many pics. 4 med hot Hatch green Chiles, 1 white onion, 6 Tomatillos and a head of garlic (shelled). Evoo everything and broil to blacken. Add all to blender/food processor with 1 bunch of cilantro leaves and 1 cup chicken broth to mix. 4 cups total.
    2 lbs pork shoulder cubed and rubbed with Penzy’s Adobo and Cumin. Hot smoked 325 or so with hickory for an hour.
    Everything into a pot and simmer until pork is fork tender. Add salt to taste. I added some red potatoes at the end to clear the pantry (St. Paddy’s).

    Outcome was tasty. Light rich smoke taste. Flavors good. A little drier than my usual. I almost always do a pork or lamb ground meat or ground sausage mixture. This beef was too lean. I should have added some fat/oil.

    And It was definitely overcooked. Man did it shoot to temperature quick. I was dinking around on the other side of the house and it had blown right past temperature up to 190°F+!!

    Yikes. But it was OK, wifey loved the flavor. All is well!

    Peanut butter banana bread... First thing I have cooked since surgery... Well I fried two eggs yesterday morning.
