Try this to start, and see how it works. Wife says she sometimes adds a small amount of bleach.

Green peppers, tomato's, okra, and cucumber are all producing nicely. I'm even going to finally be picking green beans soon

I put down more mulch today. It's hot and taking lots of water.

those green beans will be ready soon. then watch out, because you'll spend 15 in one area and barely move, and you'll end up with a 5 gallon bucket of them ;)

Just make sure she knows modern canning practices. They used to do things like water bath low acid vegetables such as green beans, but that's not a safe method! They need to be pressure canned. This is my go-to canning book, I highly recommend it. https://www.backwoodshome.com/shop/product/growing-and-canning-your-own-food-2/

I have blanched and froze excess tomato's in past years. I want to try pickled okra though. Not sure whether I'll freeze or can any excess green beans.

Yeah, she used to cook the green beans and then can them in steralized jars. I'm looking for a pressure canner and watching YouTube videos lol.

Yea, they used to just water bath stuff for a really long time and call it good. Not safe.

Pressure canners are expensive, but if you are planning on canning regularly it's well worth the expense. Get the biggest one you can afford. Mine will do up to 32 pint jars at one time. Also, the ones that have a dial gauge and metal-to-metal sealing surface are the best. I got lucky and got mine at a garage sale for something like $50

Good suggestion. Pickeled stuff usualy only needs water bath, and well made dilly beans are really good. I did pickled carrots last year, those were good to.

Some new pictures for you all of the experiment in galvi tanks.

I moved tanks around because I had a lot of stuff bolting on me. Tomato’s and the new pepper bin are on the left. It will get most of the light the ones on the right are little sun in the morning decent sun mid day and as you see good sun in the evening. Those bins on the right contain normal cucumbers, red beets, walla walla sweet onion, zuks, and the remaining 6 broccoli that haven’t bolted on me yet
