I was going to add the same thing. I’ve heard excellent things about their care for gluten issues.

i know that people who have celiac are given a monthly stipend from the govt to offset the cost of GF foods

Barilla sells a great gf pasta. My grandson was tested and confirmed for Celiac at 4 and he would gladly take that pill everyday. It's difficult at school, as they have a limited gf menu, and when we eat out it's a challenge, given that he is a picky eater to start, like many children. Then, at every gathering, like a birthday party usually means I bring his meal and it's just not the same experience as what his friends are getting. I told him about this research and he is hopeful for the future.

We’re giving this a try tonight. Corn and rice flour noodles. We’ll see how it compares to the OG.

Well, aside from the noodles being a bit firmer it’s about the exact same. I’m extremely pleased. Easily beats any GF mac and cheese I’ve had. One lesson I learned, which I should have know from other GF pastas, was stir immediately. I forgot and had some clumps form that didn’t quite cook through.

Made my grandson a gluten free pie, with blueberries from our own yard and using a crust recipe that calls for sour cream. It's very flaky and moist for a gluten free crust.

    That looks amazing!
If he's too picky to eat it, send it my way :hungry:

Thanks. He is picky, but actually enjoyed his piece. He must be maturing. Truth be told, I ate one too and it was as good as a regular pie and I am a pie expert. My wife is the baker. So she rolled the crust and fluted the ends, but I think the key was the sour cream. I also used very cold butter (frozen, actually, since I had none in the frig upstairs). Both made the crust super flaky.

there's a cookie recipe that i love that uses sour cream. the cookies are almost a cake-like consistency and are so yummy. its actually a regular recipe that my mom had baked when i was a kid. i've made it with a couple different GF flours and it turns out awesome - 1:1 on the flour, no special tricks, just one of those magic recipes that works both ways!

Post it up! I’m not much of a baker myself, so I need this in my life.

We just got introduced to oat flour Swedish pancakes. After Trader Joe’s changed their GF ‘flour’ mix our Dutch babies haven’t been the same. The oat flour is easier to make and cost a lot less!!! :hungry:

Will return with recipes and pictures possibly tomorrow.

They’re cheaper than others I’ve seen, I hope they’re fantastic! We don’t have any artisan shops in the area (entire DFW metroplex, imagine that) that have decent options — from what I’ve experienced, anyway. I do not care for pasta/bread making and I’d prefer to support a local business than buy big business. Let us know how they are!!

We have a TJ relatively close, but I’ve been unhappy with all of their gf products. Don’t get me wrong, I’m always on board to try some new new!

I just tried a different Pamela's mix when I couldn't find the usual pancake mix I like. Its GF and paleo, more expensive than the GF stuff but it was good. Filling though - 1/2 cup of the ydry mix made just as much batter as 1 cup of the GF stuff
    upload_2021-7-27_18-17-27.jpg

me either. and I love cinnamon rolls... or cinnamon anything really. I usually do double cinnamon whenever a recipe calls for it
