    1. Thank you, I’ll be on the look out! Anything with rice flour tends to fill us both up faster — I always need to add more moisture to recipes to accommodate the soakature? Soak-up-ed-ness? Thirst-ability? That’s the excuse I use for being chubby.

    if baking mixes like pancakes and muffins are too dry i usually throw in a little applesauce. thins it out and adds texture at the same time. i usually keep a pack of the little individual cups - the kind for kids lunch boxes - on hand at all times. and yes, GF stuff tends to be on the chalky side of things so anything to help keep the finished product moist is a must!

    Down in West Yellowstone for the weekend - car show - and since I was in town for lunch I stopped by the Smokejumper Cafe at the airport. Owner is GF so they're set up right with a dedicated kitchen area. Didn't stop last year so its been a while. Still a great little place. Burgers are freaking awesome. Don't know how but I managed to eat the whole thing. They do breakfast too. Great waffles. Hours are kinda funky is the only down side - 9 to 4. So if you ever happen to be in this area check them out!

    Reworked my “beer battered” fish tacos tonight. Spicy battered cod, agave lime marinated mango, hot pickled red onion, plain ole cabbage.

    On another note… the best, hands-down-the-competition-is-over gf tortillas I’ve ever had are made by The Salsa Texan. My sister found them awhile back and gave us a bag when we visited in July. We order 6 more when we got home :rofl:

    They’re pliable, soft, have a bit of chew, hold together, and they’re delicious. I think I prefer them over regular flour tortillas at this point. You do have to order ahead and it is a single person operation (outside of his sales team), but the wait is heckin’ worth it.

    Vacuum sealed, they freeze extremely well. Haven’t tried otherwise, but some say tightly wrapping in plastic wrap and foil helps. 940-390-7866

    Actually got it a few weeks ago and forgot about it. Couldn't find it at any local stores so I've been stopping at every grocery store I pass when I'm traveling on the weekends. Finally lucked out at an Albertsons 90 minites from home.

    It was good - pretty much like what I remember it tasting like. Havent felt good today, needed some comfort food.

    Hey y’all - long time listener/first time caller. The missus was recently diagnosed with Celiac’s that is being confirmed with more testing, and we were certain about the first test’s accuracy with a single slice of meatloaf. The breadcrumbs got her.

    Anyway, she just learned about the Salsa Texan from an amazingly cool 9 year-old with Crohn’s at Costco. Sweet kid - hope she keeps getting better. Oh, and we can second those tortillas. Much better than the cilium husk/coconut flour ones she has a recipe for.

    its probably a relief to know whats going on - and once she commits to the new diet and restrictions it will be an even bigger relief.
    if there's any questions you guys have, misteps we've all made and can help you from making the same mistake just let us know.
    some of the stuff is an acquired taste but I can assure you the variety of products out there today is amazing compared to what was out there years ago

    Not sure yet. There were blood markers (on an empty stomach) for Celiacs that would have been off the chart had she actually had anything to eat that week. Her sister was diagnosed 3 years ago…and is 3 years older. It clearly runs in the family but must have skipped a generation because her grandmother may have had this and been treated for something else back in the late 70s.

    Local company, going to give it a try
    $8 for two pizzas and it's good for a month. I pay $6 for the premade Udi's crusts so I figured having the smell of fresh baked something was worth the extra $2 :laugh:

    giving this a try. baked up nice - did it in a 8" springform pan and it didn't crack or stick or burn.
    just iced it with fresh cinnamon buttercream and letting it chill a bit before i dig in

    UPDATE: very tasty and nice and moist, not too grainy or chalky like some GF cake mixes. Too bad its $7.50. I only got it because it was on sale for $5

    just throw about 1 tsp of cinnamon into whatever buttercream recipe and youre GTG
    I noticed that WM has Great Value GF Cake and pancake stuff now. Haven't tried any yet. I was just intrigued by the almond flour cake idea with this and it was good
