My wife made a huge tray of lemon bars a few days ago. GF shortbread crust, lemon curd and a meringue.

    Incredibly messy but Incredibly good.

I haven’t had lemon bars in a good while. The lemon curd looks fantastic! Excellent work.

We eat a decent amount of their stuff. Our safeway carries them. They're pretty good, nothing mind blowing by any means but I've never had anything bad from them. We buy their bacon fairly often, too.

I know sausage can be a "grey area" for being truly safe due to the manufacturing process. was super happy to see this brand with GF stamped front and center.
i've decided i need to try making gumbo so i was on the hunt for andouille and wasn't having much luck until this popped up
good to know. i found it at our Winco and at my local MT only chain of Town and Country Foods. didn't see any bacon or any of the other products mentioned on their website but maybe more will start showing up at the stores soon.

Been a few weeks since I posted but reading through the last few pages, you guys have done some great stuff! Bagels, cookie bars, cheese balls and RL cheddah biscuits!!! Ha. And I’m supposed to be staying away from all this stuff now that it’s a new year!

I’ll add one of my favorite things to make - cheesecake. This was a Chocolate Chunk Cherry Cheesecake, and the crust was a GF chocolate sandwich cookie - I forgot the brand but love using these for cheesecake crusts!

:hungry: I hope you brought enough for the whole class?
the premade mi-del crusts are my go to for a "graham" or cookie crust. there's a regular one and a chocolate/oreo type one

Today was the first time I've seen it and we haven't tried it yet but I picked up some four cheese tortellini from Costco.

I didn't see any linguini in the store.

looks like have several other varieties too. will have to check my local costco next time i'm in town - i dont usually visit the freezer section so would have missed out on this. sounds like a great camp meal to have on hand in the summer!

Just so you're not wandering around looking for them, these were in the refrigerated section near the cheese and soup, not the freezer. :)

Those linguini noodles are our favorite noodles! They come in and out of stock at our costco, so we usually buy 2 2-packs when we see them and toss the extras in the freezer. I think we had the tortelloni once and we overcooked it so it just all fell apart. So that'd be my word of warning, don't over cook and don't over stir or handle too much when draining.

Was not aware of the tortellini! Thank you for sharing! Added to my Costco list!

And @MTgirl - ha! This thing was gone a day after Christmas. But, happy to share the recipe if anyone is interested. :)

I haven't made a cheesecake in forever. I think the best I've ever made was Giada's mascapone cheesecake - super rich and creamy....so so good. But macarpone tends to be a little pricey so buying everything is about $30 for it.

And in my pre GF days when I ate whatever there was a local restaurant that made a pumpkin cheesecake. Never cared for pumpkin or pumpkin pie but damn was their pumpkin cheesecake good. Super light almost like a mousse

Wife made a lasagna tonight with brown rice jovial noodles. It was pretty fantastic, couldn’t tell it was GF noodles.

My wife has already eaten both packs. I was able to snag ONE SINGULAR TORTELLINI from her.

She says they are a "buy again" but not right away. That means they're good but not knock your socks off.

For me, comparing them to gluten tortellini, they have an ever so slight granular finish but not nearly as much as other GF pasta I've had and are a bit chewy but that's better than overcooked and mushy.

I plan on doing some sort of veggie pasta with them, but I haven’t planned it out yet. I’m hopeful about the texture!
