    GF Bisquick Pancake mix FTW!!!!!!!!

    It’s been years since we have had chicken and dumplings. Wife made chicken stock from two leftover rotisseries then took a bit of the stock to make the chicken and dumplings…we both had seconds bowls of this :)

    I generally enjoy the things you make/post, but garlic bread and icing does not sound like a good idea :(

    how about garlic bread and sweet and sour pork? :hungry:

    no - making a pot of my sausage soup tomorrow and thought a hunk of warm garlic bread with it sounded good. the bakery hours are weird so i usually only make it over there on saturday mornings. which also happens to be the day she makes a big batch of cimma-nom rolls.

    Ooooooh that sounds amazing! We just had sweet and sour chicken skewers the other day! I made a sauce using the leftover pineapple juice, rice wine vinegar, mirin, and some other stuffs. I didn’t get a final pic of it :(

    homemade S/S sauce for me too. combo of orange juice, rice vinegar, soy sauce, brown sugar and ketchup. kind of an acquired taste but its a recipe that my mom passed on to me.

    Give a pinch of Worcestershire sauce ;) I used tomato paste instead of ketchup, but very similar recipe. Are you doing chops?

    no worcester on hand - too salty for me

    i like to cook up a pork loin roast in my dutch oven and then dice it up and throw the sauce over it. usually 60-80 minutes at 325* for a 2 lb roast. take it out to cool while i'm making the sauce, dice it up and throw everything back in the dutch for another 30-45 at 275*. any covered casserole dish would work too. cook up some pad thai rice noodles and veggies and you got dinner. minimal effort all together.

    whenever I mention my S/S recipe people just look at me like o_O funny that you have one similar. thought this was just a random thing my mom made

    1 cup orange juice (or pineapple)
    1/4 cup rice vinegar
    1/4 cup ketchup
    1 tbsp soy sauce
    1/3 cup brown sugar

    add all to a 2 cup or larger measuring cup and stir. microwave for 3 minutes in 1 minute intervals, stirring after each minute.

    in a small bowl dissolve 2 tbsp cornstarch in 1/4 cup more juice. add to the rest of the sauce. microwave until boiling - it should turn from a milky light orange to a more clear dark orange color too

    i also like to add about 1/3 cup finely diced bell pepper and 1/3 pineapple chunks to the the whole thing.

    Mine is really close, just add mirin, lemon juice, and the Worcestershire! I don’t measure it or add the solids though, I go by taste.

    I’m excited to see your dish, sounds super good!

    Same town as me. And i know it's pricy but I figured if they had some new GF stuff I might try a few things. Def NOT going to be my go to for regular groceries!

    found this at safeway. about $7 and there's enough for 2 servings. directions say 2 to 2-1/2 minutes and thats serious. they started popping open in the water as i was trying to fish them out at the 3 minute mark. just threw some barilla marinara over them for a quick dinner.

    I’ve been experimenting with the premade tortelloni from Costco that… someone… (forgive me) posted awhile back. SIL and her kids moving in has temporarily changed my cooking regimen - it’s all bulk now.

    Anyway, I don’t even boil the pasta anymore (same 2-3 minute instructions). I make my sauce from scratch and toss the pasta in for the last 5 minutes of simmer. It works out perfectly. Tonight I made it with herb crusted chicken breast and it was a hit with the toddler.

    For something “quick” - my sauce is still 6 hours :rolleyes: - I would recommend trying it? Depending on your quantity, an extra 1/2 or full cup of water/stock might make the difference.

    that's a thought too... will try with the other half of the pack

    kid friendly cooking favorites of mine when I must tolerate other people's mini humans... chicken parm and my chicken broccoli casserole. haven't had a kid yet who refused to eat seconds! and cooking for a crowd cut yourself a break and go with ready made stuff as much as possible
    chicken parm
    boneless skinless chicken breasts
    1/2 cup EACH kraft shaky cheese AKA kraft parm and cornflake crumbs (they're GF) plus 1 tsp italian seasoning to bread the chicken (should be enough for 4 breasts)
    melt a few tbsps of butter in a large skillet and throw in the chicken. cook over med low until cooked thru
    top with some barilla tomato basil or marinara and lots of mozz and parm cheese
    i like to do a few rotini or penne with some steamed broccoli and simply organic pesto sauce dry mix.
    simple but tasty. even my pickiest foe who claimed "i don't eat meat" as she watched me cook ended up asking for seconds :laugh:

    and my chic/broc casserole i think i mentioned a while back
    walmart has GF cream of chicken soup
    dice up 2 boneless/skinless chicken breasts and brown in a large skillet
    in a bowl mix up the soup with 1-1/2 cups EACH rice and water. add in some thyme, sage, black pepper and paprika (i don't measure so maybe 1/4 to 1/2 tsp each :notsure: )
    that makes 3-4 large searvings and easy to double or triple as needed
    once the chicken is almost cooked thru add the soup/rice mix to the skillet
    throw some frozen veggies on top (broccoli and carrots or whatever you please) and cover with a lid. cook over medium low and DO NOT STIR. the veggies steam on top while the rice and chicken cook on the lower layer. ready to serve once the liquid is gone and the rice is tender.
