When I got my hollow baguette from them I tweeted at them and they responded a few days later, but I wasn't enraged any longer and never took it any further. Worth a shot if you're on the tweeter

Gluten free cornbread from Aldi is pretty darn good.

It was fantastic! Not as good as normal full gluten pizza, don’t get me wrong, but it was such a nice break from udis crusts or thin cauliflower things or whatever.

    Lessons were learned:
    - Package doesn’t have you pre/par bake the crust however I’d recommend it, ours was underdone in the middle, but the below things may have solved that issue, too
    - we used a cold pizza stone, should have gone like 425 for longer instead of the 475 for 16-20 minutes on the package, or, just preheated the stone
    - package says to roll it, we just mushed it out with our fingers onto a corn meal dusted stone, worked pretty well, it stuck when we tried to roll
    - pepperoni, pineapple, and bacon was magnificent. Safeway has a fire roasted sauce and then a mix of mozzarella and provolone rustic cut cheese.

(We added more cheese after that pic)

I’d eat that all day, thanks for the tips. I hope it makes its way to Texas! I’ll be on the lookout.

I appreciate the grueling science you had to endure

My son made gluten free cookies yesterday. We think for a girl he met at college but we're not positive.

Solid thread dude @Beef Nachos, I'm just rambling here. Many years ago my girlfriend was diagnosed with a pretty severe case of Celiac Disease. Way before it was turned into fad and annoyed the hell out of us industry workers with all the wannabes.

She's in the category where even a small cross contamination can knock her on her ass. Each time she accidentally eats gluten it jacks up her intestines. Not fun to see her in that pain.

Back in the day, learning how to cook the normal favorites without containing "poison" (that's what she calls it) wasn't so simple. Today, its no sweat to accommodate specialty meals thanks to the Red Mills of the world.

The abundance of gluten free options today is epic. Makes trying to figure out what's for dinner in our household much easier. :D

Atta kid. I won my wife over by mailing her no-bakes when she lived in Alaska and I was in WA. The good oatmeal, peanut butter, chocolate chips, butterscotch chips kind of no bakes.

My wife eats these Freschetta GF pizzas...
She swears by them...and they're reasonably priced.

As does she. Gastric response to that much cauliflower is...not something you enjoy.

    Thanks and glad you’re here!

It’s weird how there are so many symptoms - and sometimes none at all - between different people. I look forward to your contributions here.

I really need to update the recipes post :(
