    Belt is loosened and pants are unbuttoned. I’ll get my recipe written up shortly for these smoked brisket enchiladas with hatch chile sauce. I can’t decided if I need another margarita or a nap.

    you all will get a kick out of this.
    Wife in hospital giving birth last year and had wheat allergy noted on her charts. Every single day (about a week) they brought things she couldn't eat. One day the plate included a couple slices of white bread toast and they said "it's not wheat, it's white bread". :rofl::rofl:

    Also, this is the frozen selection of GF, dairy free and vegan at my local store. Their prices are a little steep so if I can get it elsewhere for cheaper I do. But the fact that a local grocery chain with maybe 6 stores can carry this much....wish it was this easy when I first switched!

    That selection is amazing! Most grocers around (local or chain) have a small shelf in a back closet passed the employee break room in the warehouse. :rofl:

    We have no problem eating the cost for specialty items because we already spend an insane amount on her other medical issues. That said... it would be cool to not pay $6 for a loaf of ‘white’ bread when we used to get whole wheat + grain bread for $3. You want scones because I opened my mouth about TW? Sure, I’ll order more flour. You want a pizza? I could go for a feta/pepperoni/black olive... We try to stick to veggies and meat because it’s actually cheaper now. I’m learning how to smoke on a charcoal grill as a means to open up more variety.

    I’m always buying up pasta, though. I’m on the hunt for the most versatile, best texture, and best ‘reheatability’. Spaghetti has always failed us (surface area vs pasta size), but penne seems to always win out. We’ve been buying this from Costco:

    The ‘Live G Free’ brand from Aldi is great, too. It doesn’t reheat as well, but it has a decent texture the first go around. Their white bread is the CLOSEST to real bread texture I’ve found yet.

    If your posted brand doesn’t show up here in the next few months (seasonal buying structure), I might see about ordering online or having a pal *ahem ahem* mail me some.

    Found some Schär gluten free pizza crusts and decided to try them. Hatch chili breakfast pizza with pepper gravy and retried black beans!

    It isn’t a bad crust, but I prefer making the BRM one for a “real” pizza experience. This felt like a matzo cracker texture, albeit thicker.

    A couple of finds from my recent pinterest binge.... plan on trying them very soon. Both sound very similar to what I used to get at restaurants pre-GF and miss terribly. My approach to most recipes is to follow the recipe to a T the first time around. If its good but not great I'll do it again but get a little creative to suit my tastes more or to attempt to make it what I remember from my pre-GF days. If it sucks then we just chalk that up on the failure board and move on.

    I start craving more "comfort food" type meals once the weather starts to cool down. And I love chicken soup so that creamy wild rice sounds amazing. Really looking forward to that.
    And the pilaf sounds close to a restaurant thing I used to get but the place closed and even if they weren't I wouldn't trust them to make it GF. Don't think I'll have to tweak it too much, sounds just about perfect as is - and simple too!

    lactose free natural cheese? how is that possible?

    That's why I posted it.. I figured I'd let you all decide on the reality of that! Haha I don't know of any cheese that isn't naturally GF and I like the idea of a sheet of cheese for various ideas I have but it's not worth the price to me to experiment with.

    GF Orzo! I wanted to try a recipe last winter but couldn't find orzo. Anyways I was so excited to see it, I bought it. Now if I could just remember what I wanted it for...

    soup is done...its...interesting.
    first i was a little concerned cooking chicken in the crockpot - never tried it before and I wasn't sure how i felt about it sitting in tepid water all day. it cooked just fine it seems. could hardly get it out of the pot to chop it up! its so tender... time will tell if i end up with salmonella...
    1 cup of rice didn't seem like enough so i added another half cup. i think i should have stuck with the 1 cup.
    i put in double the celery and carrots but i dont think it was enough.
    i also added in about a teaspoon each of sage and thyme in addition to the spices called for in the recipe. still seems a little bland.
    or maybe it just not "chicken-y" enough. i used boxed chicken broth, thinking i should have used the bullion stuff i usually use for soup as it has a richer flavor.
    and for the flour mix i used 1/2 cup of my usual GF flour mixture, 1/4 cup of corn starch and 1/4 pancake mix. it thickened up pretty good but once it was in the soup it has become the consistency of oatmeal. hope it doesn't get much thicker...i couldn't thin it out any more, my crock pot was up to the brim!

    definitely needs some tweaking if i make it again. more veggies, more spices, less (or different) flour, and better broth to start with. and a bigger crockpot.
    i want to love it but it needs some work.

    it's good but not great. just hoping I don't end up with something the consistency of jello after it cools down :laugh:

    my usual chicken soup is
    10-12 cups water
    two bone-in chicken breasts with skin (or one turkey breast)
    boil until all of the "gunk" floats up and can be skimmed off the top.
    then add
    1-1/2lbs baby carrots, chopped
    1 small yellow onion chopped
    1 bunch celery chopped
    3 tbsps better than bullion
    add those to the pot and bring back to a boil for 15-20 minutes (maybe longer if using turkey) then reduce to a simmer
    pull out the chicken/turkey and set aside
    add to the pot
    2 tbsps butter
    1 tsp each thyme & sage
    1/2 tsp black pepper
    1-1/2 cups instant rice
    chop up the chicken/turkey and throw it back in
    simmer until the rice is done

    makes a ton but freezes well. I usually make a big batch this time of year and throw a couple of containers in the freezer. that's my "emergency soup" stash in case I get a cold or something - nothing better than homemade soup when you're sick!

    It sounds excellent — like a quick broth. I don’t need to be sick to enjoy a delicious homemade soup :amen:
