Got My Smoke On!

    It is ZERO degrees in NE Indianer with very low ambient humidity and I am smoking a brisket :bananadance:

    I don't know exactly why but I really enjoy grilling and smoking in the winter, even better when it is snowing. There is something primal and satisfying aboot it eh? People tell me yeah I have a grill but I do not use it much in the winter time. What? That's the best time to use it! :boink:

    I got it on the smoke at 7am. Gonna do a 12 hour run in my stick burner with hickory at about 225F, then wrap it up and chuck it in a cooler for 4 hours or so.

    I get these briskets at GFS for around $37 which I think is a great price and I just use the GFS rub. I used to get all fancy and seek out special rubs or make my own rub but the GFS rub is fine really. No injecting, scoring the fat cap, trimming, or anything fancy I just rub it and chuck it in the smoker.

    Damn no need to worry about my smoker getting too hot today! Ambient temp up to 15F and I am having to use twice as much wood as normal and even open the intake vent 1/3 of the way which I never have to do since the airbox leaks enough air typically to maintain ideal temp.

    Just pulled it off the smoker, wrapped it in foil and a towel, and put it in the cooler.

    It looked and smelled really good, cannot wait to slice it up in a few hours.

    Right at about 15 hours for the whole process... :hattip:

    Damn it! I am going to the store when I get off work (10 min) to buy some meat. I want to grill now! I usually use my grill here and there through out the winter. As stated, it seems almost better in the cold and snow.

    Yes, I have a Weber Smokey Mountain I bought a year ago. I've done mainly pork shoulder's and various kinds of turkey. Did one Brisket I bought for $50.00 at Costco (prime meat). Very awesome, looking forward to warmer weather and more brisket
