    I smoke stuff a ton of ways. This was a cheater smoke. Hour of hot smoke on the Webber @ 300-325, 6hours on low In the crock pot.

    Basically a smoke braise.

    I like it. How do you regulate the temperature in the Webber. I have one, but have yet to try smoking in it.

    For 225* smoking, I have the intake below almost shut. Vent wide open. I use 2 bricket trays, split to the outsides. I start the coals hot in a chimney . Then I put them in the trays and put my wood hunks in. I let it run to about 300* and wait for the wood to light . Then I move the wood to the center/ outside arra in between the coal baskets. Meat goes in center over indirect heat. Beer can of water in their for moisture. You can toss trimmed fat in there too on the coals to keep it moist.

    I've done everything from pork shoulder to packer briskets on there. But I normally do beef in my Ugly drum smoker.

    The Webber works great for ribs.

    No prob. I've got a bunch of little things I've learned over the years. Feel free to ask whenever . Bbq is the direct reason of the extra 30lbs I put on in my 30s.


    Ps always remove the silverskin on ribs. And I almost always do fat cap down, no flip.
