    I’ve found spacing the meat out more helps for an even cook. Meat/3 veg/repeat indirect for 10 minutes and direct for 5-10, depending on your temp.

    Thats how I do it, You get way better results cooking them separately IMO.

    Hell ya, rack O lamb is one of the hardest cuts to cook. It goes from what you have to well done in about 30 fucking seconds. That looks delicious my man. :thumbsup:
    The pork belly aint no slouch either. Love me some pork belly.

    Seriously though, I've never tried it out of fear of having to clean blobs of cheese out of my smoker.

    Smoking cheese is not done with high heat. Cold smoking cheese with a pellet tube is my preferred way but there are a few others.
