    Hot hot hot and fast - 2 minutes per side MAX. You want char on the fire side before you see opaque hit the center. Flip for 30-45 seconds less than the first side. They’ll finish cooking before you plate.

    I know you didn’t ask me and he’s cooking in a basket, but I wanted to offer my unsolicited advice :)

    Oh no problem, any advice is much appreciated. I've used a basket, on the grill grate, in an iron skillet, with all the same results. Marinating hasn't helped. My cook time must be the difference. 2 mins is fast! Is a brine necessary?

    with the basket, i took roun 15 minutes to cook, lottsa stirring, i used WET alderwood for smoke

    I usually do a dry rub 60-30 minutes before while the grill is heating up. The salt helps pull excess moisture out.
