Hatch chilies are from Hatch New Mexico , north of Las Cruces.
In the river valley south between Las Cruces and El Paso Texas is the world biggest pecan producing area. They plant trees there in perfect little rows like they plant corn in Iowa.

Pick a field on Google Earth and zoom in and you'll see what I mean

My sister lived in Albuquerque for just over 20 years. She introduced me to them and it was always a treat if I got to visit near the end of summer.

My rib game has been way off lately, decided to try something different.
Frozen, on the grill at 450 for 15 minutes, turn frequently to get grill marks.
This pic was right after a 10 minute flare up that was on the way to burning the rest of the state. Fortunately it burned itself down.
Wrapped, and had to use the pizza pan to get more away from the heat.
Better. Last rack was burnt in under 45 minutes. Pretty sure my grill is running a bit hot.
This was after 2 hours at the lowest setting.
Gonna have to do a few more before summer ends and really get it down.

Any reason you don't use the shelf inside your grill?

I think I'll do just that.
My old grill had no upper shelf. I assumed it was a bun warmer or something.

Sure you can use it to warm your buns.. but it's also good for less direct cooking on may items.. and definitely worth a shot for your rib idea
