83% success. I’ll brine them with salted beet juice next time to see if I can get more color throughout the meat. I can use the Frank’s mixture as a dipping sauce.

Those look amazing! I dig the creativity!
I used to cure chicken wings then smoke them, which freaked people out because it turned the meat a pink color (no where close to what you have) and people would keep thinking they're raw.

I might try this approach again, but keep the wings whole. The research shows brining or marinating won’t pull color in and I really want this way to work. The bites with Frank’s were perfect in flavor, texture, and gag factor.

The problem is too much of the moisture getting cooked out of the injection. I can’t poke each wing 2 dozen times to get an even spread like I do whole turkeys. I guess there are a lot more chicken wing experiments in order :notsure:

When I make Ramen Eggs I let them sit in beet juice to give them a wicked pink color. I use canned beets and have found no difference in color from pureed beets and the beet juice.

I know you like to play with your food as much as I do so let me offer a suggestion. Try soaking them in Hawaiin Punch.

    Edit:
Not nearly as healthy or natural as beets I know

Visiting my son for our birthdays (his today and mine tomorrow) We always celebrate together.
Anyways, chuckeye steak, flankenstein beef ribs, lamb chops, roasted baby potatoes, mozzarella tomatoes and zucchini and yellow squash, all made on the grill.
