    Eggs - used 4 tonight, number depends on the amount of onions you use, I used 2 medium sweet onions last night for just me and the wife. I ended up eating half of her tray which was about the same amount as the pic of my tray above.
    1/2 beer for 4 eggs, beat together
    Flour - put on a large cookie sheet or platter for dredging.
    Vegetable oil for frying - I use wesson
    Rings into the egg/beer and dredge in the flour, coating heavily, then throw in the preheated oil

    The trick is only flipping them once, so the oil has to be hot but not too hot. I cut them thin, between 1/8" & 1/4", because thats how the wife and I like them. If its too hot they will burn, you need to sit there and monitor them because they go quick. One flip and brown, then pull out and place on paper grocery bag covered by paper towels, best way I find to absorb extra oil when frying shit. EVERYTHING stays crispy when I use the paper grocery and paper towel method.
    Then transfer to the paper towel covered cookie sheet (as seen above) and keep warm in the oven at 180* until ready to eat. I like them salted with regular table salt.

    Best onion rings I have ever had, my dad taught me how to make them.

    Granted its a fucking messy undertaking but man are they good.

    The key is to not touch them once they are into the oi8l because the flour flakes off easily. Gotta be gentle'ish with them.

    Edit: And fry in a large cast iron skillet. For some reason the cast iron makes them brown nicer. Plus, thats all I cook on if I am using a pan anyhow. I dont fry shit unless its in a cast iron skillet.

    Why have I never had a fried jalapeno? Literally two of my favorite things, fried unhealthy food, and jalapenos.. Do you deseed and cut into strips, or stuff with cheese/meat and dunk it whole?

    Not sure about a batter but pat dry onions. flour,egg,then breadcrumbs. bread them 15 minutes before you fry them. it lets the coating bind together and sticks better.
