Couple of chickens seasoned with Seasoning Salt and smoked with a bit of maple wood.
Got about an hr left to finish

 

if you rub the skin with a bit of vegetable oil and then coat it in seasoning salt it forms a sort of crust..

I use mustard or bbq sauce since it’s got vinegar in it and helps break down the tissue or skin slightly for better rub adherence. Kinda like using an etching primer before paint. No you don’t taste the mustard after it’s cooked into the meat. It also helps to make a better crust.

Pull your pants down chicken is where you peel off the skin gently and season the meat then put the skin back on and cook. She does a garlic, rosemary and pepper mixed in butter. Comes out really tasty

 

Cooked lunch just off the south fork of the Sauk River with my daughter this afternoon. Kept it simple with thin sliced pork chops and apple. Salt and pepper then pan sear.
