    Found another one of my steaks. I like it carmelized, rest assured, they are all medium rare on the rare side.

    I used to hate pork chops, but I started wet brining them and it’s made all of the difference.

    - Onion apple compote
    - Micro greens
    - Sweet garden carrots with sour greek yogurt sauce

    I think if more people cooked them to 145F instead of 160F they would enjoy them better!

    That was part of my problem, overcooking them. Much better even without brining. Meat thermometer is also useful

    I would sear to 140 and let the carryover heat bring it 145

    Another fun thing is to smoke big ol bone in chops to like 120F then reverse sear them to bring them up to temp.. the color pork takes on is beautiful!

    Agreed. I always eat the really thick pork chops and I cook them until just barely pink and pull them. Cover for about 5-8 min with foil and they finish off to white all the way through but they leak juice. Perfect. I like the same char on my pchops as I do on my steak. :thumbsup:

    Heres what I was talking about. I didnt cut it before the pic but I guarantee its juicy as hell because they always are. Extremely rare that I over cook a pchop. Knew I had a pic somewhere. That char is intentional.

    Thick pork chop marinated in homemade teriyaki sauce
    Brussel sprouts with butter and Beau Monde seasoning
    White rice with pineapple tid bits

    Bacon wrap veggies. Zucchini squash, yellow squash, 1/2 white onion as the base & wrapped with a green pepper & then Smithfield Bacon
    Thin sliced chicken ready, so on it goes
    Its a bacon veggie on some tasty chicken. 3 pieces of chicken got the citrusy rub from Trader Joe’s. Other 3 just salt & pepper.

    Just got a new 36” BlackStone Pro… after a few healthy coats of FlaxSeed oil to season it. We did steaks seared in garlic butter and asparagus. Turned out amazing! Love this new grill!!
